Bake, Fry, or Air Fry

Egg rolls can be baked, fried, or air fried. We find deep frying to give the crispiest crust but air frying is a close second. Egg rolls don’t get quite as crispy in the oven but they still taste amazing.

If baking or air frying be sure to generously oil the outside of the egg roll wrapper.

FAQs

Why are my egg rolls not crispy? ›

Keep Oil at 350˚F – If the temperature drops too low, the egg rolls will be soggy and oily. If it's too hot, they will burn before the filling is cooked through. Ensure the oil does not drop below 325F.

How to keep eggrolls crunchy? ›

Cool your rolls on a wire rack instead of a paper towel or plate. Regardless of whether you air fried, deep-fried, or baked your egg rolls, do not let them cool on a paper towel or plate. Instead, use a pair of tongs to set the egg rolls on a raised cooling rack with a baking sheet underneath it.

What is the best oil for frying egg rolls? ›

Peanut oil is great for frying egg rolls as it has a high smoking point and provides a nutty flavor. If you don't have it on hand, you can use canola or corn oil. Do not use oils like sesame oil or olive oil, as they are not good candidates for deep-frying due to their low smoking point.

What is egg roll filling made of? ›

The fried skin of an egg roll has little crackly bubbles that are crisp and fun to eat. The name is a misnomer since there are no eggs in egg rolls!

Why are my homemade egg rolls soggy? ›

Can you reuse oil after frying egg rolls? ›

What is egg roll sauce made of? ›

A healthier version of homemade sauce for egg rolls is made with jam, pickled plums, vinegar, and seasonings. Common ingredients include apricot jam, Chinese pickled plum or Japanese umeboshi, rice vinegar, sugar, and pickled plum liquid.

What are egg roll wrappers called? ›

An egg roll is a fried, savory roll filled with shredded cabbage, ground or roast pork or shrimp and other ingredients inside a wonton wrapper or thick, wheat flour wrapper. Egg rolls are thought to have been invented in New York City's Chinatown restaurants in the 1930s.

What's the difference between egg roll and spring egg roll? ›

Spring rolls are wrapped in thin flour wrappers or rice wrappers, while egg rolls are wrapped in a thicker, noticeably crispier wrapper that's been dipped in egg for richness.

How do you crisp soggy egg rolls? ›

Once they are, brush or spray the leftover egg rolls lightly with oil before transferring them to a preheated 425-degree oven. Leave them to reheat in the oven for anywhere between seven to 10 minutes, flipping halfway through, until crisped.

Why are my spring rolls soft after frying? ›

Ensure the oil is at the right temperature (around 350-375°F or 175-190°C) and don't overcrowd the pan to maintain crispiness. Additionally, using a paper towel to drain excess oil after frying can help keep them crispy.

How to make soggy spring rolls crispy? ›

There are two options: freeze-wrapped spring rolls and deep fry when you are ready to enjoy. Or what I like to do is fry all of them for 3 minutes (70% cooked), let them cool down, and freeze. When I am ready to enjoy, I pop them into the air fryer or oven at 370F for 7 minutes, and it becomes super crispy!

What makes spring rolls crunchy? ›

Her secrets are three: Fresh ingredients, the thinnest wrappers available, and high heat. Soggy bean sprouts result in soggy rolls, she offered as an example. The thinner the wrapper, the flakier the crust, and if the oil isn't hot enough you'll get "grease-laden" rolls.
